The Gaillac vineyard is one of the oldest in France. In the Gallo-Roman period, the archaeological site of Montans was a landmark for wine amphoras.
Several centuries later, the monks of Abbaye Saint-Michel worked to preserve native grape varieties and established very strict rules regulating wine-growing and wine-making. These rules and this heritage are continued to this day by the Gaillac wine-makers and result in their distinctive wines.
